The last lot of cards from the weekend - having a play with Kristy's stamps and dies.  I loved how the bee shaker card turned out, so made two :)

July Card Camp

Kristy headed up on Friday night for a card camp weekend!! We headed straight to the scraproom and made cards till midnight!

Up the next morning and back into making cards!  Kylie came over Saturday night and joined us for another late night of crafting :)

Our weekend's efforts!

Today we popped into Kylie's place, so we could look at her gorgeous succulent plants and swap plant cuttings.

We had lunch at our fave Chinese restaurant.

While she was in town, Kristy's friend put in an order for some rum liquers, so we headed to the Rum Distillery.  Clay was so excited to be at the rum distillery-he marched straight in and announced he was "Buying a bottle of pineapple rum!" We had a pretty pissed off kid when we wouldn't let him get a shopping basket to buy any rum LOL

We then went to the Brewed Drinks barrel, so Kristy could stock up on her fave softdrinks.

Then it was time to say goodbye as Krsty headed home.  It was another fabulous card weekend and we are looking forward to the next one :)

Vanilla Slice

This vanilla slice is so quick and easy!  I'm never making my own custard filling again after trying this recipe :)  I did two versions of vanilla slice - one with lattice biscuits Cottees brand pudding mix with this recipe.

Vanilla Slice
Ingredients
200g packet lattice biscuits any flat-square biscuit will work
600 ml cream
100g packet vanilla pudding mix

Passionfruit Icing
1 cup icing sugar
2 passionfruit pulp
1 tablespoon butter softened

Instructions
Line a 20 x 30cm lasagna dish with baking paper.
Layer with 8 Lattice biscuits flat side up.
In a bowl, using electric beaters, mix cream and pudding until thick.
Spoon the creamy mixture over the biscuit base.Top with another layer of biscuits, shiny side up.
Refrigerate for at least 30 minutes before topping with passionfruit icing.
To make the icing, mix together the icing sugar, passionfruit and butter until an even spreadable consistency is reached. Add more passionfruit if required.

The 2nd reciepe used Aeroplane brand Vanilla slice pudding and puff pastry, usimg this recipe.

Vanilla Slice

Both recipes are delicious - it just depends if you prefer lattice biscuits or puff pastry.  I also found a salted caramel version which I want to try!!

Lindalee's Birthday Dinner

Last night was our last catch up before Nettie, Dennis and the girls headed to Brisbane for more holiday adventures.  We decided to have dinner and have an early celebration for Lindalee's birthday.  Craig cooked a delicious Chinese meal - entree of spring rolls, somosas and dim sims, then main meal of cashew chicken, honey prawns and sizzling steak.  Nettie cooked sweet & sour pork and fried rice.  It was delicious!  Dessert was a chocolate birthday cake that Clay and I made :)

Cruise Countdown

This year is zooming past and we have been so busy- I realised I haven't shared we are going on a cruise in September!!  We are taking Clay on his first cruise / overseas holiday and it's so exciting!!  We are sailing with P&O - out of Sydney (all cruises out of Brisbane were booked out for allocated number of kids when we wanted to travel) and a new to us ship - Pacific Explorer!  This ship is the biggest we have been on and we loved sailing out of Sydney on our last cruise (which was when I was pregnant with Clay).

We are visiting ports that are familiar to us, to make things a bit smoother on our first BIG family holiday.

It's been a long time since we've had a proper holiday, so decided to make it worthwhile and will stay a few days in Sydney and then a few days on the Gold Coast too.

We've been busy getting a new passport for Clay and renewing ours since the expire within the 6 months travel rule.  I've been going through my closet and working out clothes and outfits for the theme nights ...can you tell I'm excited!!

Countdown...9 weeks!

Beach Day

Today we all headed to the beach- the sun was out, but the wind /temp was cold.  We kept warm out in the sun & playing soccer.  We spent the whole day there - chatting, spending time together and had a BBQ lunch.  Anna and Andrea braved the water for a swim - we thought they were insane, but Nettie pointed out that this is same temps are their summer season LOL

From the beach we headed to the Hummock lookout to take some pics.  I couldn't resist a ride in Matt's convertible :)

Another perfect day with special friends x
